I am almost always at a loss for what to do with Italian sausage. For some reason my brain defaults to some sort of pasta dish with red sauce. Now don't get me wrong, that is a great dish, but variety is the spice of life. Right? So, I dug through the cabinets and found polenta. And from there the above dish came together.
